Tuscany is easy and there are many great vineyards to visit, but in Puglia they are not so obviousand many are just wineries with no tourist facilities, this one I did find and is worth a visit and they have a very good restaurant in Lecce…
And the second one has a wine museum and is a well known brand.

I will give just one in Tuscany as I had a connection to visit years back and it has since developed its tourist side, beautiful place.

there are dozens more easily found.

Years ago I met the lovely folk behind http://www.tenutaviglione.com/ at a few tastings and have wanted to visit them ever since, but it’s not happened yet. Maybe if you do I can live vicariously through you

Badia Coltibuono is indeed a magical place and worth staying at for the peace, atmosphere as well as the food which the restaurant pair with their wines. They will also do a cellar visit and tasting.
A visit to Volapia to the north of Radda is interesting; an entire hamlet given over to winemaking, bistros and also accommodation.
