Satay recipe

250 grams pork shoulder steak
3 strips of belly pork, remove bones and the thick rind.

Marinade in equal amount of Soy Sauce and Ketjap Manis, one crushed large garlic, diced ginger , option to add galangal if available.
Marinade for as long as possible.
Mix the fat and lean meet on the skewers so as to balance when on the bbq.

Use some of the residual marinade to manage flare ups.

For the sauce, lightly sauté

3 garlic cloves
2 shallots
1 chilli

Add 250 grams peanut butter
200ml coconut milk
4 tbs of ketjap manis
1-2 tbs brown sugar
Juice of 1/2 a lemon or lime

Add sambal olek to taste

As this comes together add water to deliver the consistency.

We would normally put one pack of peanuts through a blender to add some crunch to the sauce but did not have this to hand last night.
